Padma Lakshmi likes big, bold flavors — spices and citrus especially — and her Thanksgiving turkey is infused with them. Today, she’s in the studio kitchen with Genevieve Ko showing us how to make her recipe for Slow-Roasted Turkey With Apple Gravy.

The turkey is prepared over a bed of herbs, fruits and vegetables, and the pan juices are used to create a fruity yet savory gravy. To keep the turkey moist, you start with a buttermilk brine, then roast it at a low temperature to make sure it cooks through but doesn’t dry out, and baste it to finish.
